VISITING the Hybu Cig Cymru - Meat Promotion Wales -
stand, at the Royal Welsh Show, the Bishop of Swansea &
Brecon, the Rt Revd John Davies, took part in a cookery
demonstration in front of a large audience (above). Among
the tips he gave were how to reduce the over-saltiness of a sauce
by the judicious addition of lemon juice, and that you should
"season the pan, not the meat" (a new one on me).
He went on to speak about justice in
the world of food production, such as paying dairy farmers properly
for the milk they produce; and about financial support from the
banks for those who want "to get a foot on the first rung of the
ladder of business in the rural economy".
He also called for "some regulatory
body set up by government to which retailers and producers could
have automatic and swift access if they . . . have what they
believe to be justification for changing the terms of their
contractual arrangements".
Besides the cookery, the Bishop also
did some dry stone walling.
